I am quite excited today because I am going to the Be:Fit London show tomorrow which is something I look forward to all year. Formally known as the Vitality Show I have gone every year for at least 5 years and I always make a day of it, go on a VIP package, have a massage and really treat myself so I can’t wait. Just as a warming this does mean that I might not post tomorrow and my weekly roundup might be delayed by a day.
Last night I watched the final episode of Awake which I really enjoyed but it just got totally weird and the ending I think meant that there is not going to be another series but you never know with these things and if it was successful they might bring it back with even more weirdness.
I made the salad in this post a couple of days ago but it is one that has been in my head for ages and it just took me a little while to get round to making it. I am so glad that I did as the flavours go really well together. It is a simple accompaniment to a meal but is fresh and perfect when you want something a bit lighter.
I particularly love this as avocado is one of my favourite foods and full of so much goodness. In fact when I was working in banking, which feels like a lifetime ago, I used to crave avocado everyday. I think it was because I was so exhausted and lacking nutrients that my body naturally knew avocado would give me what I needed. Now I am more healthy I do not get food cravings in the same way but still enjoy avocado.
Anyway one of the best things about this salad is it is really easy to prepare, does not need a lot of ingredients and looks really impressive on a plate. When you see it the first thing you think is about how pretty it looks then you just want to get stuck in. When using avocado you might want to add a little bit more salt than usual as I find it needs it but if you are worried about sodium then use SoLow or other similar replacement which is what I do, it tastes just as good.
Ingredients
1 Avocado, halved, peeled & sliced
1 Orange cut into segments
1/8 tsp Dried Chilli flakes
1 tbs Extra Virgin Olive Oil
Salt & Pepper to taste
Handful of Coriander Leaves to serve
