Firstly let me tell you just how excited I am, my new (and first) DSLR camera arrived on Monday and after a crash course on learning how to use it I had my first “shoot” yesterday. I am probably being a bit generous as I still have so much to learn and hope that my photography will improve over time. Having said that I am quite pleased with my first attempt and it has given me loads of inspiration to get in the kitchen and create some new things.
The recipe for today is very simple and something that I have quite often, it is the perfect dish if you are having a tapas style meal, you can have it cold and take it on a picnic or as I do quite often use it as the main carbohydrate in me meal, instead of potatoes. These reason I do this quite often is I try and stick to a Low GL diet as I am insulin resistant, plus I love butter beans and some this way they are quick, simple and tasty.
Lemon & Garlic Butter Beans
Serves 2-4
Ingredients
1 x 400g can of Butter Beans drained and rinsed
2 x garlic cloves, thinly sliced
1 Tbs Lemon Juice
1 Tbs finely Chopped Parsley
1 tsp Olive Oil
salt and pepper to taste
Method
Gently warm the olive oil in small saucepan and then add the garlic and cook for 2 minutes on a medium heat. Add the butter beans and warm through. Mix in the lemon juice, parsley and season. Serve with Love. It really is as simple as that!
