Apple and Roquefort Salad

Last night the weather was so hot and had been for so long that I was unable to cook and just wanted something really light. The great thing about a salad like this is that you get a fab flavour combination that offers a real taste sensation. It is following in my trend of adding fruit to my salads which has become my favourite things to do. I am sure this is one that I will want to make again and again and hopefully you will like it as much as I do.
Apple and Roquefort Salad
Serves 2

Ingredients
1 Baby gem lettuce
1 Pink lady apple
50g Roquefort cheese
2 tbsp Walnuts, chopped
2 tbsp Olive oil
2 tbsp Apple cider vinegar
1/2 tsp Dijon mustard
Salt and pepper to taste

Method
Chop and wash lettuce, dry on a clean tea towel. Quarter and remove core from apple and slice. Mix oil, vinegar and mustard and salt and pepper and pour over leaves making sure they are well covered. Top with apple slices and walnut pieces. Crumble over Roquefort cheese and serve with some good quality bread.
