Ok so let me start this post with a confession, this was meant to be flapjacks but a made a school boy error and had to adapt my recipe into granola which was an amazing result. SO what went so wrong, well basically I was working out my flapjack recipe which normally calls for butter and I had some coconut butter in the cupboard and thought that it would do as a replacement. When my flapjack just fell into pieces I realised this was not the case.

On sunday morning I woke up with my crumbled, attempted flapjack in a container and had the idea to make it into granola, so all I needed to do was mix in some nuts, seeds and a little oil and I put it back in the oven for a few more minutes and we had a wonderful sunday breakfast that tasted so much like coconut it was amazing.

When making up this granola I picked some of my favourite nuts and toasted them in the oven with the granola but you can pick the nuts you like the most and you can always leave them out until the end so that they are not toasted, it is all just personal preference, and what you have available at the time.
