I have been having great fun today making a complete mess of the kitchen making chocolate truffles. I think they have worked quite well, I did some dark chocolate and sea salt ones and some raspberry and dark chocolate ones. I might share the recipes if I can get them to look good.

I have also been attempting to make some white chocolate ones and to make my own dairy free white chocolate. This involved me using coconut milk powder instead of regular milk powder which is fine but I thought I had a really good idea of using powdered agave instead of powdered sugar. This is not as easy as it sounds. I am still waiting to see if it sets or if it tastes anything like chocolate!

The recipe for today uses on of the most popular ingredients at this time of year, cauliflower. It is something I have got out of the habit of using in recent years but it really is amazing in the salad. Also I wanted something that used pomegranate because I bought a few for juicing and realised that I can’t stand pomegranate juice, it just tastes really weird. However the pomegranate pips are lovely to eat and add a stunning flavour to any salad they also perfectly complement the nuttiness of cauliflower and taste amazing in this salad.
